Ingredients: |

1/2 c. shortening 3/4 c. sugar 2 eggs 3 1/2 c. flour 2 tsp. baking powder 1 tsp. salt 1/2 c. pineapple juice 1 tsp. vanilla Jelly filling |

Method:

Cream shortening and sugar. Add eggs and beat at low speed for 2 minutes. Add alternately flour and baking powder with salt, pineapple juice, and vanilla. Roll out on well-floured board1/4 inch thick; cut in 4-inch rounds. Place a heaping teaspoon of filling in center of round; bring edges together to for triangle and pinch seams. Bake on greased cookie sheets at 350° for 25 minutes until golden brown. Yield: 3 dozen. |
