Chocolate Shortbread Logs
From the Kitchen of the Mauro Family

Ingredients:
2 c. unsifted flour
1 c. butter, softened
1/2 c. sifted confectioners sugar
1 tsp. vanilla extract
1 (6 oz.) pkg. chocolate chips
1 Tbsp. shortening
Method:
Preheat oven to 350°. In a large bowl combine first four ingredients; thoroughly blend. Using 1 teaspoonful of dough for each cookie, shape with hands into 2-inch logs. Place 1/2 inch apart on ungreased cookie sheets. Bake in 350° oven for 13 minutes. Cookies will remain quite pale. Cool thoroughly. Melt chocolate and shortening over hot water or carefully in microwave oven. Remove from heat; stir. Dip ends of each cookie into chocolate. Place on a cookie sheet lines with waxed paper. Chill until firm. Makes about 6 dozen. If a very chocolatey cookie is desired, double chocolate and shortening.
